Recipe: Raspberry Yogurt Parfait

Mmmm, yogurt parfait… Now I grew up on Yoplait and that was it. Nothing fancy happening there. In my twenties, when I started seeing yogurt parfaits in cafeterias. I was intrigued. What was not to like? Sugar on sugar on sugar in the throws of a textural smörgåsbord. Yes please.
Over the years, I’ve become more selective with ingredients. As I’ve learned that best quality = best taste. Seems obvious but remember, raised on Yoplait. So as the natural berry season has been coming to a close this year, I’ve been trying to catch the last of the good crops. And some raspberries at Sprouts caught my eye.
Here’s my current go-to yogurt parfait formula. And I think it tastes best when it’s all mixed together and sits for about 3 - 5 minutes. Let the ingredients get a little friendly with each other.

I was feeling naughty so I went with whole milk. Siggi’s won me over awhile ago with their plant-based yogurt. Best plant-based yogurt texture I’ve found that isn’t overwhelmingly almondy or coconuty. Their yogurt has been incredibly smooth and creamy.

This was a more recent find. It has been amazing how much unnecessary crap gets added to granola. In addition to Yoplait, Nature Valley Crunchy Granola Bars, Oat ‘n Honey were another staple growing up. But why, why, WHY? Does there have to be soy lecithin and natural flavor in the granola. So began my quest for granola that tastes like Nature Valley but without the ultra-processed ingredients. Enter Michele’s. Your welcome.

Why organic berries, well taste always and also because berries consistently have some of the highest pesticide residue levels. For more information check out the Dirty Dozen and Clean Fifteen.
To macerate - berries + sugar. Add enough sugar for your desired level of sweetness. For 2 small packages/12oz of raspberries, I added 2-3 spoonfuls of sugar. Combine, stir, cover, and let sit overnight.

After I assembled the parfait, I chose to add a little lemon juice to the raspberries.
