Summer = Strawberry Shortcake (Cloud Cake). My eyes lit up with glee when I saw this in TJs freezer section. And it was produced in Sweden. They make good desserts, right…maybe? I let it defrost overnight in the fridge and dove in. All the ingredients came together nicely. The strawberries were the dominant flavor. The freshness of the strawberries shined through, which was impressive given their previous frozen state. I couldn’t really taste the custard. It just provided a texture contrast. Hence, I scooped some out for further investigation.

And it just had a sweet processed taste to it, like the filling of a convenience store hand pie. A couple bites in, I noticed some surprise guests - coconut and amaretto(?). Quick ingredient check: confirmed, coconut oil and almond. And interestingly, hazelnut.

Overall, this would satisfy a strawberry shortcake craving but a semi-homemade shortcake would be better (Entenmann's Pound Cake+Cool Whip+Macerated Strawberries and top with a little lemon zest if you’re feeling fancy).

Glad I tried it: Yes

Would I buy it again: No (sorry TJs, almond flavor isn’t my jam in a strawberry cake)
